Sauteed Corn

Sweet corn is in season here in Ohio. Corn is my favorite veggie, well that or potato's.
 Unfortunately the racoons pretty much destroyed mine:(  but a new produce stand opened
 next to where I work so I have been picking some up after work. Gotta have my corn!!!
 It's such an easy summer time meal.

 I always make sure I get enough to have a few leftover for this sauteed corn.

Cook corn like you normally would.


Cut it off the cob.


Chop some green and red peppers and some onions. I use red if I have them.


Saute onions and peppers in 1 Tbsp butter.


Add your corn and additional butter. The butter depends on how much corn you have.


Season with salt and pepper. Can you tell I like pepper?  Sometimes I add some fresh parsley too. Saute a few minutes until heated through.
