Sauteed Corn

Sweet corn is in season here in Ohio. Corn is my favorite veggie, well that or potato's.
Unfortunately the racoons pretty much destroyed mine:(  but a new produce stand opened
next to where I work so I have been picking some up after work. Gotta have my corn!!!
It's such an easy summer time meal.

I always make sure I get enough to have a few leftover for this sauteed corn.

Cook corn like you normally would.

Cut it off the cob.

Chop some green and red peppers and some onions. I use red if I have them.

Saute onions and peppers in 1 Tbsp butter.

Add your corn and additional butter. The butter depends on how much corn you have.

Season with salt and pepper. Can you tell I like pepper?  Sometimes I add some fresh parsley too. Saute a few minutes until heated through.

Hope you like it as much as I do!

Breakfast Hash Brown Casserole

My husband and I love making breakfast whenever we both happen to have the same day off. I enjoy it more than going out to eat but that may be because I work in a restaurant.
Anyway, sometimes I get tired of all the eggy breakfast casseroles so I made this. I cut this out of a magazine years ago and stuck in my recipe box and finally decided to try it. I wish I wouldn't have waited so long because it is really good!

Breakfast Hash Brown Casserole

2 lb. ground sausage. I prefer a sausage with only salt and pepper added. If you like a spicer sausage I'm sure that's fine too.
2 cups shredded cheddar cheese
1 can (10 3/4-oz.) cream of chicken soup
1 cup sour cream
1 cup French onion dip
1/2 cup chopped onion
1/2 cup chopped green or red peppers or some of each
Salt and pepper to taste
1 30-oz. bag frozen hash brown shredded potatoes, thawed
Cook the sausage until browned. Drain well.
In a large bowl combine the chicken soup, sour cream,French onion dip, cheese, onion, peppers, salt and pepper. Fold in thawed hash browns. Mix well. Spread 1/2 of the hash brown mixture in a 9"x13" greased baking dish. Spread 1/2 of the sausage over the hash browns. Repeat layering second 1/2 hash brown mixture and the reat of the sausage on top. Bake at 350 for about one hour or golden brown.
Opt...Top with additional shredded cheese before serving if desired.

Flowers in my Garden

Since it's been so hot, humid and dry  I have lost the mood to do much outside. Other places in the area have had nice amounts of rain but it seems it always misses us. So I haven't taken many pictures the last few weeks but here are a few I had not gotten around to post yet.
Peony Poppy

Queen of the Prairie

Bee Balm

Larkspur

I tried for years to grow Larkspur with little luck. A few plants here and there. This year it came up like crazy! Underneath all that is my Rudbeckia struggling to grow. I just didn't have the heart to pull it out after trying so hard to get it to grow. Wonder what will happen next year. I just cut it off and I could hear the seeds go flying.

Hydrangea
Zinnia
Hummingbird Moth on Butterfly Bush

Poppy
Echinacea
Can You tell I like pink flowers?

Butterfly Weed

My butterfly weed looks out of place among all my pink flowers but it doesn't like to be moved so for now it stays where it's at.

Campfire Hamburger and Potatoes

I don't know how half of the summer went by and I forgot to make these. Most summers I make them several times but somehow it slipped my mind until my daughter requested them.
Start with a large piece of heavy duty foil. Spray the center with cooking spray. For 4 packets I divide 1 lb. lean hamburger into 4 patties. Start layering on the foil.

Hamburger season with salt and pepper.

Sliced potatoes. Here I used new Yukon Gold so I did not peel.

Sliced sweet onion.

Baby carrots cut in halve.
Season with salt, pepper and parsley. Sometimes I use Lawry's Seasoning Salt instead of regular salt. Dot with butter. Sprinkle shredded cheese on top.  Note: I don't do the cheese.
Start folding up the edges of the foil but don't seal yet.

Add 1 Tbsp Worcestershire Sauce to 1 cup Chicken Broth

Pour 1/4 cup into each packet. Seal edges well.

Throw on the grill

Grill covered about 45 minutes or potatoes are tender.

Yum!

Campfire Hamburger & Potatoes

1 lb. Hamburger
4-5 medium potatoes peeled and sliced
1 medium onion sliced
1 cup baby carrots halved lengthwise.
6 Tbsp. Butter
Fresh minced parsley. I use dried if I don't have fresh on hand.
Salt and pepper to taste
Shredded cheddar cheese optional. I don't add this.
1 Tbsp. Worcestershire sauce
1 cup chicken broth
Divide hamburger into 4 patties and place on a large piece of greased heavy-duty foil. Place potatoes, onions and carrots on top. Sprinkle parsley, salt and pepper on top. Also the cheese if you use that. Dot with butter.  Fold foil up partway around potatoes. Stir your worcestershire sauce into chicken broth then pour 1/4 cup into each packet. Seal the edges of foil well. Grill covered approx. 45 min or until potatoes are tender. Yield: 4 servings
